May is National Egg Month.  The entire month is dedicated to the egg. Eggs provide high protein.  In particular, as we age, we lose muscle mass and strength.

Importance of Eggs

Tips on Eggs

A bad egg is easy to identify.  If you think your eggs are passed an expiration date or don’t have a date on the carton, some ways to test the freshness are to lay the egg on the bottom of a bowl.  If the egg stands upright on one end, yet is still touching the bottom, it may not be safe to eat.  The best way to test an egg is to crack it open and smell.  For instance, if it has a bad odor, you know this isn’t safe to eat.

Eggs for Breakfast

Experiment with different recipes for breakfast.  Try mixing in a herb, fresh vegetable, or meat and prepare an egg omelet.  I love eggs for breakfast with a grilled muffin.  That is my go-to meal a lot of mornings.  Some easy ways to cook an egg are:

  • Sunnyside
  • Over easy
  • Over hard
  • Scrambled
  • Fried
  • Boiled (hard or soft)

If you want to get adventurous with your eggs, add some cheese and hot peppers or spices.

Egg recipes for lunch or dinner

An easy recipe to try is English Muffin Egg Pizza.  You need English muffins, tomatoes sliced, mozzarella cheese, oregano, salt and pepper, and a hard-boiled egg.

  •   Prepare hard-boiled cooked egg.
  •   Toast English muffin halves.
  •   Drizzle with olive oil.
  •   Layer tomato slices.
  •   Slice hard-boiled egg.
  •   Add mozzarella cheese
  •   Add some oregano, salt, and pepper
  •   Broil until the cheese melts.

Another easy recipe that is easy to make and light is Egg drop soup.  This is considered a comfort food by many.

  • Use 2 Eggs.  If you want to go lighter, use Egg whites.  You can also mix and go half and half by using a whole egg and egg whites.
  • Find a good stock and use seasonings and boil.
  • While the stock is simmering, mix the eggs.
  • Pour eggs into the broth.
  • Mix until completely smooth.
  • Add Sesame oil.
  • Add any other ingredients you may want, whether garlic, corn or parmesan cheese.
  • Season with salt and pepper.

I use eggs to make my Caesar salad dressing and mix separately in a small bowl to get smooth and mix with mashed anchovies, Dijon mustard, Worcestershire sauce, ground pepper, lemon juice and olive oil.  I mix all ingredients together and pour onto the lettuce and add parmesan cheese.  My Caesar Salad recipe is a favorite and my husband loves it when I make this for him.

National Egg month is a good time to experiment with new recipes or use eggs to make your favorite recipes.  On the whole, National Egg month is important as it brings good nutrition and protein needed for your health.
