Strawberry Trifle Recipe

Homemade Light Summertime Desserts

Of course, during the Summer months; fruits are plentiful. If you are looking for something that is refreshing; this recipe is ideal.

Ingredients

  • Fat-free cream cheese softened – 4 ounces
  • 1 Cup of fat-free vanilla yogurt
  • 2 Cups of 1% low-fat milk
  • 1 package of instant vanilla pudding mix
  • 2 Cups of sliced fresh strawberries
  • 1 Tablespoon of water
  • 1 prepared or store-bought angel food cake

Directions

In a large mixing bowl, mix the cream cheese and yogurt together. Add the milk and pudding and beat until smooth. In a blender or food processor, blend 1/3  – 1/2 cup of strawberries and a tablespoon of water.

Next, tear your angel food cake into cubes. Use a trifle or large bowl. Layer with 1/3 of the pudding mixture and strawberry sauce. In addition, you should add some small strawberries.  Continue to repeat all layers. Last, top the final layer with the remainder of the cake pudding mix, and strawberries.

Lastly, refrigerate for a few hours.

Also, whipped cream is optional. Since I like making my own; I use low sugar and a tablespoon of Vanilla and light cream in a blender. Check out my Sweet Ideas Without Added Sugar post for some healthy sugar substitutions.

Homemade Summertime Light Desserts – Dark Chocolate Mousse Recipe

Dark Chocolate Mousse Recipe

Ingredients

    • 1/2 cup of Dark Cocoa
    • 1 Teaspoon of no-flavor gelatin
    • 1 Tablespoon of cold water
    • 2 Tablespoons of hot water
    • 1/3 cup of sugar – use something from my recommendations above as a healthy substitute
    • 1 cup of whipping cream
    • 1 Teaspoon of vanilla extract

Directions

In a bowl, mix gelatin with cold water until it softens. Next, add the tablespoons of boiling water until the mixture is completely clear. Meanwhile, combine the sugar, dark cocoa, vanilla, and whipping cream. Next, add the gelatin mix. When this is complete, beat or mix until blended.

Refrigerate and spoon into dessert cups.

Berry Custard Recipe

When you are looking for something easy to make that is cool and refreshing; this berry custard is ideal.

Ingredients

  • 3 Eggs
  • 2 Cups of 1% low fat milk
  • 1/4 Cup of Sugar – use one of my sugar substitutions from my Sugar post
  • 1/2 Teaspoon of vanilla extract
  • 1 Cup of fresh berries

Directions

Microwave all ingredients except the berries in a bowl and stir until smooth. At the same time, you can either puree your berries or add fresh ones to the mixture – your choice. Divide the fruit into bowls or cups.

And, that’s all you need to have this custard ready for you and your guests.

Chocolate Covered Strawberries Recipe

Ingredients

Strawberries -I recommend using a pint or more as you can always make more and refrigerate.

1/2 Tablespoons of Coconut Oil

2 Cups of Chocolate – use either semi sweets or your favorite low-fat chocolate

Directions

In a bowl, microwave or melt your chocolate in a pan with the coconut oil until it is completely melted. Next, dip your strawberries in the chocolate.

In my opinion, the best place to put your strawberries is on a large baking sheet with parchment paper.

Next, refrigerate for at least 30 minutes to an hour.
