Celebrate National Salad Month! So, May is the month to get creative. Are you ready to start making more salads? With warmer weather here, it’s time to stock up on fresh produce.

In the first place, this month was launched by the Association of Dressings & Sauces in May 1992.

When it comes to salads, there are a lot of ways you can get creative. For instance, you can prepare a salad as either a side dish or a meal.

So, are you ready to get started?

If you’re looking for something as a meal; the following are a few suggestions I have for you to make for lunch or dinner.

In the first place, cooked vegetables are always a great option. You can grill or roast vegetables to create a colorful salad of different textures and tastes.

For this salad, I suggest using the following vegetables:

  • Avocadoes
  • Edamame
  • Eggplant
  • Garlic
  • Peppers in colors such as green, red and orange
  • Radishes
  • Tomatoes

After roasting, add a splash of light olive oil, ground black pepper, and transfer the garlic you roasted or grilled to add flavor.

Healthy Reasons to Add Salad to your Diet

When you’re looking to add some healthy food to your diet; kale is a great option. Moreover, kale is loaded with vitamins. Be sure to visit my National Kale Day post to read more about this superfood.

  • First, chop up some kale. Also, you can add chopped Romaine Lettuce.
  • 1/2 cup fresh Parmesan Cheese
  • 1 tablespoon of Extra Light Virgin Oil
  • 1 clove of garlic minced
  • A pinch of ground black pepper
  • 1 – 2 anchovies mashed
  • 1 tablespoon of Dijon Mustard

Next, add your greens to a bowl. And, then to make your dressing, use a small wooden bowl and mix your olive oil, minced garlic, mashed anchovies, dijon mustard, and parmesan cheese.

If you want croutons, use a piece of old-bread, add a little olive oil or light butter, and sprinkle some fresh spice and toast until crispy.
